Giardiniera is delicious on sandwiches, bratwurst and hot dogs, as well as on eggs and pizza, among other things.
Marconi may not have invented giardiniera all by themselves, but they are credited with spreading the condiment’s popularity throughout the chicagoland area.
It’s our hot giardiniera relish mixed into a creamy, hot dipping sauce. Add the carrots, cauliflower, serranos, garlic, celery and bell pepper to the salt water and stir to combine. Mix until the salt is dissolved. Once you taste it you will figure out what you prefer to use it on.
It is rich with oil and olives, a slight hint of sweetness from the red bell peppers and carrots, some brightness from the vinegar, and a touch of garlic and oregano.
2 sweet banana peppers, diced (i didn’t use these, but i did add 2 more jalapenos) 1 large sweet onion, diced. Add this to any pasta to create a dish packed with flavor. Oil (and vinegar, if desired). Use 1 cup of good.
